1/2 cup shortening
1-1/4 cups brown sugar
1-1/2 cups cooked, mashed pumpkin
1/2 teaspoon salt
1/4 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
2-1/2 cups flour
4 teaspoons baking powder
1 cup raisins
1 cup chopped nuts
1 teaspoon lemon extract
Cream shortening and sifted sugar thoroughly. Add eggs, pumpkin and
seasonings. Blend well. Sift flour and baking powder together, stir in
raisins and nuts. Add flour mixture to the creamed mixture and beat.
Blend in lemon extract. Drop from teaspoon onto greased cookie sheet.
Bake 15 minutes at 400 deg. F. Makes 36.
The baking powder should mean fluffy cookies.
