Look at the size of this squash!
WOW, look at the size of this sweet meat squash a neighbor gave us! I posted one previously, but this one is even larger! I put a few household items near it to give you a sense of scale. This will make a LOT of pumpkin pies!
I'm about ready to use that saw on it, cut it into huge chunks and roast it! :)
As you can see, I updated this post, showing the cooked squash in three very large bowls. I couldn't even fit it all in, but I did get most of it. The remainder, along with the skin, went into the compost bucket.
For those who are curious, I roasted this at 400 degrees for nearly two hours. Once you really start to smell it, open the lid and run a butterknife along the inside edge of the skin. If it parts super easy, it's done!
After it cools, I will put it all into FoodSaver bags in 2-cup portions. It will keep for a year, or more.
