Some favorite recipes

16 even-sized open cup mushrooms, stalks cut level
3 tbs vegetable oil
1/4 cup unsalted butter
3 cloves garlic, finely chopped
2 tbs fresh thyme, chopped
1 1/2 tbs lemon juice
Salt and freshly ground pepper to taste
1/4 cup fresh breadcrumbs

Preheat oven to 400F. Lightly fry the mushrooms, cap side down, in hot oil for 20 seconds.

Arrange the mushrooms in a shallow roasting pan with the stalks facing upwards.

Basmati rice is a long grained thin rice. It has a delicate flavor and taste and a clear shiny rich look when cooked. It is a prefered variety of rice for many rice preparations. Though it is a bit more expensive, it's taste, aroma and look is worth the price.

As it is a delicate rice it needs special care while handling and cooking to get the best results.

Ingredients for 3 servings of basmati rice:

Basmati rice - 1 cup.
Water - 1 3/4 cup.
Salt (optional)- 1/4 tsp.

1 pound of hamburger
2 eggs, beaten with 1/2 cup milk
1/2 cup grated Parmesan
1 cup panko or bread crumbs
1 small onion, minced
2 cloves garlic, minced
1/2 teaspoon oregano
1 teaspoon salt
Freshly ground pepper to taste
1/4 cup minced fresh basil

Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes

Cubed Meat (1" cubes): 2 Pounds
Chopped Onions (Preferably ground): 2 Cup
Salt: 3/4 teaspoon
Ground Lal Mirch (Cayenne Pepper): 1 teaspoon
Minced Garlic: 2 Tablespoon
Finely Chopped peeled fresh ginger (1"): 1 Tablespoon
Chopped Hari Mirch (Serrano, seeds removed): 2
Curry powder : 2 1/2 Tablespoons
Chopped tomatoes: 1 1/2 Cup
Water: 1 Cup
Bay Leaf: 2
Degi Mirch (Paprika): 2 teaspoon

1 1/2 pounds pork tenderloin, fat trimmed
1 pound fusilli corkscrew pasta

Ginger marinade: 3 tablespoons fresh ginger, grated 8 cloves garlic crushed 1 bunch green onion 12 ounces pineapple juice, (2 small cans) 1 cup soy sauce Habanero Pesto Sauce: 3 habanero peppers, finely minced Small jar prepared pesto Garnish: ¼ cup cilantro (fresh) 2 green onions, sliced 1 cup sour cream

2 lamb shanks AND 2 lamb shoulder steaks (yielding about 2 lbs of meat without the bone)
1 large onions, chopped, about 3 1/2 cups
3-5 cloves of garlic, crushed
2-3 Tbsp ghee (clarified butter) or 1 Tbsp olive oil with butter
2-3 Tbsp curry powder
2 tsp salt
1 Tbsp black pepper
1 Tbsp ground coriander
1 Tbsp cumin
1 tsp fresh rosemary, chopped
1 tsp thyme, dried
1/2 Meyer lemon sliced (with rind)

(We generally double this recipe)

8 ounces dry linguine or 1 pkg (9 oz.) fresh linguine
1/4 cup olive oil
2 oz. thinly sliced prosciutto, cut into 1/4 inch wide strips
1/2 cup thinly slice green onions (including tops)
1 jar (3 oz.) pimento-stuffed green olives, drained
1 cup cherry tomatoes, cut into halves (or 7-8 oz. diced canned tomatoes)
1/2 to 1/3 cup grated Parmesan cheese

1 lb. hamburger (cooked/drained/seasoned)
4 cups cooked, drained noodles
1 cup corn
1 cup chopped olives
1 cup cream-of-any-kind soup
1 cup grated cheese.

Mix all but 1/4 cup of cheese. Bake at 350 degrees for 20 minutes. Sprinkle rest of cheese over top and bake for 5 more minutes. Enjoy!

4 large onions, sliced
2 clove garlic, minced
1/4 cup salad oil
4 large bell peppers, stemmed and seeded
2 large (7 oz. each) cans whole green chilis, split lengthwise
1 tbs dry oregano leaves
2 cans (13 oz.) each tomatillos (we just use a whole mess of fresh tomatillos from the garden!)
6 cups chicken broth
4 fresh jalapenos, stemmed, seeded and chopped
1/2 cup fresh cilantro, chopped
2 cups (8 oz.) shredded pepper-jack cheese
Sour cream or plain yogurt
